The center fill is a mechanism used on many Nissen peppermills. It is identifiable by a plastic cap, often red, in the middle of the grinding mechanism on the bottom. It works because the shaft of the grinding mechanism is hollow, open both on the bottom of the mill and inside the peppercorn cavity.
